Violas, also known as Pansies, are edible flowers that come in many colours from white, yellow, orange, pink, and purple to bi- and tri-coloured. Violas have a mild, sweet taste like baby lettuce, which makes them an excellent choice for fancy edible garnish.
Use Viola (flowers only) as a dessert decoration or separate the petals to scatter them as a garnish on salad or fish. The flowers are quite lovely floating in a beverage and can be embedded into ice cubes.
Violas also press well in flower press for crafting.
Violas are typically harvested when they are fully bloomed. Wait until the flowers have fully opened and are at their peak before proceeding with the harvest.
Once ready, position your scissors or pruning shears at an angle, just above a leaf node or bud. This is usually where the stem branches off. Make a clean cut, avoiding any damage to the remaining plant.
Clip off faded flowers often to encourage fresh blooms.
