Thyme is a small, perennial herb that typically grows bushy and long. Though the leaves are small, the scent is distinctly aromatic – warm, herbaceous, and somewhat spicy with a hint of citrus.
Thyme rounds out soups, sauces, ragouts, and marinades. It goes well with mushrooms, vegetables, potatoes, poultry and meat.
Care and Harvesting Tips:
Cut and come again! Thyme can be harvested several times.
Harvesting can take place when the plant reaches 20 cm tall by snipping off the green stems. Avoid cutting the woody parts of the plant, and ensure at least 10 cm of the plant remains. It’s important to not harvest more than one-third of the leaves at a time, in order to allow the plant to continue growing and producing leaves.
